Crisp Cornmeal or Mealie Pap
- 2 cups water
- 1/2 cup white cornmeal
- Coarse salt, to taste
- Freshly ground black pepper, to taste

Directions: Bring water to a boil in a heavy-bottomed stainless steel saucepan. Slowly whisk in the white cornmeal, and cook according to package directions. Season with salt and pepper.
Pour the "pap" into an 8-inch-by-8-inch buttered pan and refrigerate to cool. (You can also put it in freezer to shorten cooling time.)
